Cherry Turnovers

I wanted to make cherry turnovers today, because:
1) they sounded good, and
2) I had an opened jar of Trader Joe's Dark Morello Cherries
and didn't want them to go to waste.
  However, I couldn't find a suitable recipe.
Any recipe that calls for a can of cherry filling or
pre-made pastry dough isn't really a recipe, is it?
So, I combined the pastry dough from this Big Oven recipe 
with my own very simple cherry filling recipe.
Cherry Filling
1 Jar Trader Joe's Dark Morello Cherries (24.7 oz)
3 Tablespoons tapioca
Directions
Pour the entire jar of cherries (juice and all) into a saucepan.
Add the tapioca and stir and simmer until the sauce thickens to your preference.
Let this cool until your ready to fill your turnovers.
 I didn't add any sugar because the cherries already have sugar in them.
 I was able to make twelve quite large turnovers.
I like to cut the pastry dough into squares (about 5"x5")
and fold them diagonally for triangle shaped turnovers.
 The crust turned out REALLY good!
For my egg wash, I only use the yolk with a tad of water.
They would be great with some vanilla ice cream...
The filling is not too sweet - just perfect.

    1. Thanks! They were rrrrreally good! My strategy is to bake on Sundays - eat one and take the rest to work the next day. Otherwise, I might eat them all...
