Summery Satay Dinner Menu

The warmer weather inspires me to grill outdoors using seasonal ingredients.
I feel like making something new...
Lemon Balm in my garden
 This is what I came up with for Memorial Day Eve Dinner.
(substituted chicken with vegetable stock)
(made half with chicken for the man and
half with tofu for me - veetavitavegetarian)
(made half the recipe, added green onions and
used coconut oil instead of vegetable oil)
(made about 1/3 of recipe)
(I made the full recipe! Yum!)
I used a combination of fresh lemon balm and mint from
the garden, and both lemons and limes in the spritzer.
I add sparkling mineral water just before serving over ice.
(made half the recipe in a small cake pan)
Smoked Coconut Cheesecake
This menu involved purchasing some new ingredients
like coconut milk, curry powder, and pineapple (I like fresh).
I usually have most of the other ingredients already on hand.

I did most of the "work" in the morning.
The tofu, chicken and pineapple marinated all day.
I made the smoked cheesecake early in the morning.
Have you ever smoked cream cheese with incense?
It was fun!  I used vanilla ylang ylang incense.

I made the coconut whipped cream frosting later in the day.

I'm planning on making Pineapple Upside Down Cake tomorrow!
This will use up more of the pineapple and the rest is for munching.

The satay, rice, pineapple and peanut sauce were great!
The honey lemon balm spritzer was really good.
Maybe use less honey next time.
The smoked coconut cheesecake was very rich.
I probably won't make it again, but
it was a very interesting recipe I had to try.

Even though I halved these recipes, we still have leftovers.
I always end up making too much food...
