Thanksgiving Week

Happy Thanksgiving Week!
I'm starting out Thanksgiving week with some cooking/baking.

This morning, I made some Cranberry Sauce:
I start with a bag of cranberries like this one.
Add one cup of water, 1/2 cup of sugar, and a splash of Grand Marnier.
Boil it all in a saucepan until it thickens to your liking.
I like to smash all the cranberries with the back of a spoon.
Next, I made some Caramel Pumpkin Pie Tarts.
That's for tonight's dessert (with a little bit of vanilla ice cream, perhaps).
Oh, I love the caramelized flavor of this...
For dinner, I'll be making Three Cheese Caprese Calzone.
I've started the dough.
All the ingredients are ready.
I'll pick some fresh basil from my potted plant right before cooking.
I just love these rainbow colored cherry heirloom tomatoes!
I have never made Calzone before so this will be fun.
The last time I ate a Calzone was probably in the late 80's at Mi Piace.
It's been a really long time since I ate there.
We were watching Parks and Recreation this week.
That's what made me remember Calzone!

I've got this week off from work so I'm making the most of it by cooking as much as I can.
For Thanksgiving Day, I'll be making:
Sourdough Bread Stuffing (vegetarianized)
Rich Gravy (for the meat eaters)
Portobello Gravy (for the vegetarians)
I'll probably make most everything the day before.
I like fresh baked rolls so I'll bake them on the day.
Everything is vegetarian except for the turkey and turkey gravy.
I can't wait!  Thanksgiving is my favorite holiday.
