If you love strawberries and ice cream, you might enjoy this magical recipe
(adapted from Cook's Country Magic Strawberry Ice Cream).
Ingredients
2 cups fresh strawberries (stems removed)
1/2 cup sweetened condensed milk
(I made mine from scratch with this recipe from Just As Delish)
1/4 cup white chocolate chips
1 tablespoon vodka (this friendly ingredient keeps appearing)
1/2 teaspoon vanilla extract
pinch of salt
1 1/4 cups heavy cream
Directions
Blend strawberries in food processor or blender until smooth.
Heat sweetened condensed milk, white chocolate chips, and vodka until chocolate melts.
Whisk in pureed strawberries, vanilla extract, and salt.
In a large bowl, whip cream until fluffy.
Fold or whisk strawberry mixture into whipped cream.
Pour into popsicle forms (or into a freezer-safe container with a lid).
Freeze until hardened.
Enjoy during this sweltering summer!
