Summer just seems right for southwest style dinners.
Here was last night's menu:
Saveur's Beef Burritos (for the flesh-eating husband)
Food Network's Smoked Chile Scalloped Sweet Potatoes (I used both russet and sweet potatoes)
CD Kitchen's Baked Jalapeno Poppers
Unfortunately, I didn't get a picture of the beef burritos...
They were eaten so fast (apparently a winner).
This was a fairly spicy dinner - mostly due to the chipotle pepper in the scalloped potatoes.
I'm always a little heavy handed with chipotle peppers... how soon I forget. They taste so good!
P.S. My left thumb is still burning from removing seeds from those jalapenos!
P.P.S. I've been eating leftover jalapeno poppers all week. They are so yummy! However, I had an idea that you could substitute monterey jack cheese for the cheddar. Either way, these are really good.
